UltraRecipes: Keep Calm & Thanksgiving on!

November 18, 2020

The holidays are upon us! These gatherings are a time for family, food, and fun! They can also be stressful. Visiting family, cooking for hours, and cleaning up can all take a toll. Wouldn’t it be nice to roll through the feasting and family time without the holiday pressure? We say yes! Welcome to UltraRecipes on Discover!

This week we went into the O.M.Goodness Bakery kitchen and tried out two deliciously easy cannabinoid-infused recipes that are sure to make the holidays go smoothly.

Pumpkin bread with CBD-infused glaze

Autumn always brings out the best in everything! Bonfires, hoodies, cool weather, and of course, pumpkins!  Our pumpkin bread is drizzled with a scrumptious, lemony CBD-infused glaze and is the perfect finish to a family feast.

This recipe is so delicious, even your pumpkin-spice-hating sister will love it! It’s full of spice and flavor and its sweetness is balanced by the lemony glaze. First, let’s preheat your oven to 350F and prepare your ingredients ahead to save time!

To start, whisk your seven dry ingredients together in a large bowl and set aside.

In a medium bowl, whisk together the eggs and sugars until smooth. Then add the pumpkin puree, vegetable oil of your choice, and orange juice. Whisk together until smooth.

Next, mix the wet ingredients into the dry ingredients gently; there will be a few lumps. Be sure not to overmix the batter.

After mixing your batter, set aside your bowl and prepare your loaf pan by spraying the bottom and sides with a non-stick spray.  Then pour the batter into the loaf pan.  Tip: You may choose to cover your loaf pan loosely with foil to keep the edges from browning, but it may result in slightly longer cook time.

Bake your pumpkin bread for 60-65 minutes. The bread will be done when a toothpick inserted in the center comes out clean. If the toothpick comes out with batter on it, put it back in the oven for a few more minutes.  Allow the bread to cool to cool completely in the pan on a wire rack before removing.

While your bread is cooling, you can prepare the CBD-infused glaze. We’ve chosen the gold standard of CBD oils–UltraCell™ CBD Oil-Lemon by Zilis.  While many pumpkin breads use an icing, we opted for a lighter glaze for two reasons:  1) everything at this time of year is super sweet, and 2) the glaze soaks into the bread just a little bit, enhancing the flavor of the bread.  It’s a win-win really!

To create your CBD-infused glaze, whisk your milk and powdered sugar together in a small bowl until smooth. It should have a thin consistency and should drizzle freely off your whisk when you pick it up out of the glaze.  Add tiny amounts of milk until you reach the right consistency. If you add too much, never fear—just add a small amount of powdered sugar and whisk again.  Once your glaze is smooth, add your Lemon UltraCell CBD oil and gently whisk into the mixture.

Next, remove the cooled bread from the pan and drizzle the CBD-infused glaze over the top. You may prefer to pour it over and let it drip over the sides. However you do it, you’ll be right!  Grab a friend (or your sister), slice it up and enjoy! Keep calm and pumpkin on!

Velvety Hot Chocolate with CBG-infused whipped cream

Our second cannabinoid-infused recipe is great for any chilly night, not just holiday dinners. Snuggle down with a good book or movie and enjoy this rich, velvety hot chocolate with CBG-infused whipped cream. It’s so delicious it’s like a dessert all by itself!

Let’s get started!  To save time, prepare your ingredients ahead of time because 1) the milk and cream need to be close to room temperature and 2) this recipe doesn’t take long to make.   Allowing the milk and cream to reach near room temperature keeps it from curdling when you heat it on the stove.

After your milk and cream have warmed, whisk the cornstarch into the milk until smooth. Add the milk, cream, and cocoa powder into a pot and whisk together gently. Heat the pot over medium-low heat, stirring constantly so a film doesn’t form over the top. Now is the time you can add your optional spices.

Remember that old adage “ a watched pot never boils”?  Well this time, watching the pot so it doesn’t boil is key. As you stir, watch for rising steam and little bubbles to form around the edges of the pot. As soon as you see the bubbles, remove the pot from the heat. Do not let it boil as the milk will curdle and the hot chocolate will go grainy.

Add the chocolate chips and vanilla to the pot and stir until melted thoroughly. It will look grainy in the beginning but will become silky and smooth while you stir. Now is the time you can add the sugar, but  you may not need extra sugar because of the milk chocolate chips.

While the chocolate cools, prepare your CBG-infused whipped cream. Whip the pint of heavy whipping cream with a hand mixer until it become thick and stiff (about 5 minutes).   When finished, add the CBG oil and fold in with gentle stirring. We chose another ultra-cool product from Zilis—UltraCBG™—because its amazing hibiscus extract flavor compliments this rich, velvety chocolate in the most scrumptious way.

When mixed, spoon your whipped topping onto your cup of hot chocolate and share with three of your closest chocolate-lovers!  This decadent hot chocolate is made to be savored, so enjoy!
